End Grain vs Edge Grain Cutting Boards
End grain cutting boards are created by arranging hardwood strips vertically and stood on end. Whereas edge grain cutting boards are built by laying strips of hardwood side by side and gluing them together. The wood fibers will run horizontally with the edge grain. End grain boards have a self-healing process. When a knife runs across the board’s surface, its slides between the wood fibers. The fibers separate then close back up, keeping your knife edge sharper for longer. The end grain build process is more labor intensive making them more expensive. Maintaining your end grain cutting board may require more often oiling or wood wax applications to prevent drying out over repeated uses and washings.
